Sourdough that proves for two days, stretched by hand and baked on a 450 °C stone in a wood oven we light every morning. Five ovens across Chennai. Twenty-two minutes to your door.
The line below is drawn to scale: fifty hours from the mix to the first bake of Wednesday service. The bake itself is the orange hairline at the right-hand end — ninety seconds, five hundredths of one per cent of everything that came before it.
Stone-milled flour from Sirumugai, sea salt, water, and the starter that has been alive since 2019.
Bulk fermented on the bench, then cut into 260 g balls by hand.
Forty and a half hours at 4 °C. Four more on the bench to wake up.
Pressed from the middle out. Never rolled, never a pin.
Casuarina from farms near Chengalpattu and tamarind offcuts from Tiruvannamalai, seasoned a year so they burn clean. The fire is lit at 10:30 and banked to the right of the dome. Nothing is baked until the stone reads 450 °C.
“The oven does most of the work. My job is to not get in its way for ninety seconds.”
Pepper chicken, curry leaf, red onion, a little coconut.
Smoked paneer, gunpowder, ghee drizzle after the bake.
Spicy pork nduja, Kodaikanal honey, chilli, a squeeze of lime.
No sauce. Mozzarella, ricotta, roasted garlic, rosemary, sea salt.
Every oven serves a four-kilometre circle and nothing outside it. A pizza that bakes in ninety seconds should not spend forty minutes in a box, so the clock starts when you pay and stops when the driver rings the bell.
We called each of those 214 orders to say so. Pickup is always free, and boxed at the counter twelve minutes after you order.
One of 5,942 dockets from August. We keep every one of them.
